Thai Chicken Pizza


I love having people over for a fun night with friends.  One of our favorite activities to host is an adult night "Cook Off".  We pick two food categories (usually a main dish and a dessert) and then all of our guests pick which category they'd like to prepare a dish in to enter in the cook off.  They prepare their food ahead of time and then everybody comes to our house where we all try the different foods, vote on our favorites and then we give out silly little prizes.  It is always a super fun night full of friends, chatting and tons of yummy food!  For one of our cook off's, the main dish category was pizza.  Somebody brought this Thai Chicken pizza.  It looked pretty, but to be honest, I was a little skeptical.  First of all, I'm not the biggest thai fan and second, what kind of a pizza has carrots on it?  I took one bite and all of my skepticism flew out the window.  I was totally addicted and kept going back for more, carrots and all!  I was anxious to make it for our family pizza night and was curious to see how our kids would like it.  Our two youngest always stick to the cheese and pepperoni zone but the rest of them totally loved it!  I think they were kind of surprised at how much they loved it.  I don't even remember who won what prizes at that cook off but this pizza will always be a winner in our book!

Ingredients
1 uncooked pizza crust*
1 7 oz jar peanut sauce
2 TBS peanut butter
2 cups mozzarella cheese
1-2 chicken breasts, diced and sauteed
1/4 cup peanuts
2 green onions, chopped
1/2 cup matchstick carrots
1/2 cup bean sprouts
1/4 cup chopped cilantro
2 TBS olive oil

Directions
I always use my favorite homemade pizza crust* but you can use a store bought crust if you want.  (These directions are for the homemade crust.  Follow the baking directions that come with your crust, if you choose to use something else.)  Preheat oven to 500.  Place pizza stone (best choice) or pan in oven to preheat with the oven.  Roll out pizza dough on parchment paper.  Mix peanut butter with peanut sauce, spread sauce evenly over the crust.  Sprinkle cheese over sauce.  Top with chicken, peanuts and green onions.  Carefully pull the hot stone or pan out of the oven, slide the parchment paper with the pizza onto the pan. Return to the oven and bake for 8 minutes.  Take pizza out of oven, add carrots, bean sprouts and cilantro.  Return to oven and cook for two more minutes, or until the crust is golden brown.  Remove from oven and brush crust with olive oil.

*This pizza crust recipe makes enough dough for 2 pizzas.

Well we have a new found love for Thai food over here, so I'll definitely have to try making this! I love your fun dinner nights that you host, we'll have to try that one of these days too!
