Breakfast Pizza with Hash Brown Crust


For this week's pizza recipe, I'm thinking breakfast.  When I came across this recipe, I knew we had to give it a try.  We love fun breakfast foods and aren't afraid to eat them for dinner too.  This recipe is genius!  The crisp hash brown crust is the perfect vehicle for the eggs, cheese and your favorite toppings.  If you want to give it a southwest twist, spread a thin layer of salsa on the crust before topping.  When my 15 year old took his first bite, he held up five fingers and said, "Five stars!"  Well said!

Ingredients
1/2 package shredded hash browns, thawed
2 tablespoons butter, melted
salt and pepper, to taste
4 eggs
2 cups shredded cheddar cheese
toppings of choice such as ham, bacon, sausage, diced peppers, sliced mushrooms, chopped onion, etc.

Instructions
Preheat oven to 425.  Combine thawed hash browns and melted butter in a bowl.  Gently stir to combine.  Spread hash browns out on a greased pizza stone and press into a crust shape, sprinkle with salt and pepper.  Bake at 425 degrees for 20-25 minutes.  While the crust is baking scramble the eggs and prepare additional toppings.  Cook any meat you use.  Remove the crust from the oven and spread on the scrambled eggs and sprinkle with cheese.  Top with any additional toppings.  Return the breakfast pizza to the oven and bake for an additional 20-25 minutes, until cheese is bubbly.

I was actually surprised at just how good the whole hash brown crust turned out. Perfect for breakfast or dinner!
