Real Southern Cream Corn


When I was 12 years old, my family moved to Georgia.  My husband moved there with his family when he was 6.  Though both of our families have moved from Georgia since then, I have a special place in my heart for the South - the charm, the hospitality and of course the food.  I'm not sure where my mom got this recipe from but it's become one of my favorite souvenirs from our Georgia days.  It has become a favorite with our kids too.  Every holiday that involves a big feast, this beauty is bound to be found on the menu.  My kids make sure of it!

Ingredients:
16-20 oz bag frozen corn
1 cup whipping cream
1 cup milk
6 tsp sugar
pinch cayenne pepper
1 tsp salt
2 TBS butter
3 TBS flour

Directions:
Stir together corn, cream, milk, sugar, pepper and salt.  Bring to a boil, simmer 5 minutes.  In a separate container, melt butter, then mix flour into it.  Add in enough liquid from the cream corn mixture to make a smooth creamy mix.  Stir this into the pan with the corn mixture to thicken it.

Hooray. So glad this is in here. I should something on my recipe when I made it for thanksgiving.
