Fiesta Ice Cream


It's freezing outside but we're warming things up inside with a little fiesta!  Okay, so maybe ice cream isn't going to warm you up but it'll make for a fun family night treat.  And the resulting smiles are sure to warm your heart!  The pure cheesiness of the line would have earned me a great big eye roll from my husband.  An eye roll well earned, I'd say.  Okay, all eye rolls aside, let's talk about this beauty.  I recently got the recipe for "fried ice cream" from one friend and then I remembered another friend making a similar (same?) dish but she dressed it up all fancy like this for a dinner party we went to.  I've done a little adjusting and combining to create this little party on your plate.

Ingredients:
6 cups vanilla ice cream
2 cup cornflakes
1/2 cup sugar
2 tsp. ground cinnamon
can of whip cream
chocolate syrup
maraschino cherries


Directions:
Line baking sheet with wax paper.  Scoop 1 cup of ice cream and form into a ball.  (I ended up using my (clean) hands to form the balls but you may find a better method.)  Place ice cream balls on wax paper.  Freeze for one hour or until firm.  Combine corn flakes, sugar and cinnamon in a gallon sized ziploc bag.  Let the air out of the bag and seal tight.  Use a rolling pin to crush the cornflakes until fine.  Remove frozen ice cream balls from freezer and coat in corn flake crumb mixture.  Freeze until ready to serve.  Right before serving, decorate with whip cream, chocolate syrup and top with a cherry.

You're killing me!! This is torture to even look at these amazing pictures while I'm on a diet! These seriously look divine, you know I've been wanting to attempt fried ice cream for a while now, but this looks easier and just as delicious!

This would be perfect for your weekly FHE treat! There's always a way to justify :-) You can also make a 1/2 cup of ice cream sized ball to cut the calories in half and still get a sweet treat.
