I love a good BBQ chicken sandwich. And it's hard to beat a crispy, buttery, cheesy quesadilla. The brilliance behind combining these two loves is pure genius! I will never be able to make a plain old quesadilla again. Thanks to Who Wants Dinner for this fabulous recipe! The first time I made these for dinner was a crazy busy night. One of those, everybody's running in a different direction and has 3.6 minutes to inhale some dinner before leaving, kind of nights. When the first bite was taken, it was like everyone froze. They would have all asked, "What is this amazing food we are eating?" if their mouths weren't so busy eating. I knew right away that this one would be set on repeat.
Ingredients:
Tortillas
BBQ sauce (homemade or store bought, I prefer "Sweet Baby Ray's")
Monterey Jack cheese (shredded)
Tomatoes (diced)
Fresh cilantro (chopped)
2-3 boneless, skinless chicken breasts
Directions:
Put chicken in crock pot and pour enough BBQ sauce on top to cover the chicken. Cook on low 5-6 hrs, shredding chicken during the last hour. Place a tortilla on a skillet over med/high heat, layer on chicken, cheese, tomatoes and cilantro then drizzle a little more BBQ sauce on top then cover with other tortilla. Cook until lightly browned then flip and repeat. Cut into wedges and serve. (Can garnish with additional toppings if desired.)
