Navajo Tacos


This dinner is one of our family favorites!  Everybody gets excited when it's Navajo taco night.  It's such a fun colorful meal - like a party on your plate!  It's so easy to customize this to each child's tastes and the smell of the cooking scones is so warm and cozy.  I make plenty of scones so that everyone can have one to top with a sweet treat to finish off a yummy dinner.  Regular honey, whipped honey butter or pumpkin butter are some of our favorite sweet toppings. 

Ingredients:
  • Bread dough  (You can use frozen dough or make your own.  I use my basic bread dough recipe)
  • Oil
  • Chili (I usually use canned chili but you can use homemade, just make sure it's thick and not too runny)
  • Taco toppings like tomatoes, lettuce, cheese, sour cream, olives, avocado, etc.
Directions:
If you are making homemade dough, after it is mixed thoroughly, let it rise for a little while.  About 30 minutes is sufficient.  If you're using frozen dough, thaw according to package directions.  When the dough is ready to fry, you'll need a large, deep frying pan.  Pour oil in the pan until it's about 1/4 inch deep.  Turn pan onto high and let the oil heat.  While the oil is heating up, start forming the dough into pancake sized circles.  Some people use a rolling pin but I like to use my hands.  I kind of like the bumpy uneven look that it gives.  Keep an eye on the oil.  When you start seeing bubbles form, put a piece of dough in to see if it's ready.  If the oil bubbles and pops when you put the dough in, then it's hot enough.  If not, wait a little longer and try again.  Once it's hot enough, add 3-4 dough circles at a time.  Keep the temperature turned to high.  They will cook fast which is what you want so that the outside is a little crisp and it doesn't absorb too much oil.  Keep a close eye on your cooking dough.  Once you see browning around the edge, use a fork and carefully turn it over.  Be careful with the hot oil!  When the other side is a golden brown as well, take it out and place it on a plate lined with a paper towel.  The paper towel will help absorb some of the extra oil.  Repeat until all of the dough circles are cooked.  Top each scone with chili and any additional taco toppings that you'd like.  Don't forget to save some for dessert!
